Growing Conditions: Moonambel – Pyrenees Ranges - East facing slopes. Ironstone soil. Elevation: 260M
Wine Making: Hand picked, open vat fermented with 15% whole bunch, basket pressed. Hand plunged 5 times a day to maximise cap content with ferment.
Tasting Notes: Bigibila’s Premium Shiraz. Dense in colour, a stunning nose, with blueberry, cedar oak and hints of iodine and charcuterie. The palate has layers – coffee bean, black pepper and blueberry. A tight structure, with fine tannins and a savoury finish. There’s something very special about this unfiltered wine, which has spent 20 months on 30% new oak, half French and half American. Enjoy it now as a big, well-balanced Shiraz or watch it develop over the next two to three decades into something even more spectacular.
